When the days get hotter in the summer months, it’s time for delicious summer salads.
As many of us are spending our summer vacation at home or in Germany this year, why not bring a little vacation to your plate at home?
Here you will find great recipes for quick, light and tasty summer salads!
Cucumbers, tomatoes, peppers and radishes are a must in a colorful salad. But have you ever supplemented kiwi?
In this dish, cucumber and kiwi are a very tasty combination. And the taste of summer is guaranteed from the very first forkful.
Ingredients:
Salad cucumbers (Salad) 2 pcs.
Olives (pitted) 200 g
Kiwi 1 pc.
Lettuce / leaf lettuce approx. 1/3 bunch
Dressing:
Vegetable oil (for dressing) 3 tbsp
Vinegar (grape or apple) 2 tsp
a little honey, coconut blossom sugar, stevia or birch sugar to taste
Preparation time: approx. 15 minutes
Break the lettuce with your hands and place in a salad bowl. Add the olives and thinly sliced cucumber and kiwis, mix the ingredients for the salad dressing, season with salt, pepper and fine herbs and serve!
How about a little oriental flair for your palate? Here’s a recipe for a refreshing salad with an oriental lemon and mint dressing that can be prepared in no time at all.
Ingredients:
Cucumber (small fresh) 6 pcs.
Chicken breast 150 g
Lemons 1 piece
Peppermint (chopped) 1 handful
Soy sauce 2 EL
Sesame 2 EL
Olive oil 2 tbsp
Preparation:
The chicken breast is gently fried and then cut into small pieces or you can also briefly fry the chicken strips with the soy sauce.
Cut the cucumbers into thin, long strips.
To make the dressing, squeeze the lemon and add the finely chopped mint and a little oil. Season the salad dressing with salt, pepper and herbs to taste before adding some sesame seeds. Mix everything together in a large salad bowl and serve.
Lunch break at 30 degrees outside? Having a barbecue in the evening and looking forward to a light salad? Then the refreshing and delicious watermelon feta salad is an ideal salad variation.
Ingredients:
Watermelon 350 gr.
Feta cheese 150 g
black olives (depending on preference, approx. 20 pieces)
Lemon balm (alternatively mint or basil) approx. 10 leaves
Dressing:
Olive oil 2 tbsp
some salt and pepper
Preparation time: approx. 15 minutes
Dice the melon and feta cheese and mix together. Add the olives. Cut the lemon balm into fine strips or fold in small leaves, reserving some for the decoration. For the dressing, mix the oil with salt and pepper and pour over the salad. Season to taste with some herbs if desired and serve fresh garnished with the remaining mint leaves.
These recipes for summer salads will bring culinary delights to your plate. And best of all, plenty of fruit and vegetables contribute to a healthy diet, which is easy in summer with a fruity, refreshing salad.
