Recipe for a paleo muffin
Peel and grate the sweet potatoes, drain the tuna, mix with the eggs and chopped spring onions.
Season with spices to taste…I used pepper and turmeric.
Bake at 180 degrees for approx. 25 min. at top and bottom heat. bake.
Can be enjoyed hot or cold… delicious, healthy and good to take with you to work, on bike or mountain tours.
